- Cook dal with turmeric and salt until soft.
- Boil veggies with ginger, chilies, and water until tender.
- Combine cooked dal and veggies, add sambar powder, tamarind, and simmer.
- Prepare tempering: heat oil, add mustard, cumin, red chilies, curry leaves, and asafoetida. Pour over sambar.
